Best Buttermilk Pancakes

I never have been a huge sweet tooth but Dayne loves pancakes. If I even mention making this recipe he acts like a kid the night before Christmas and will go to sleep early just so he can wake up to these in the morning (yes, taking about my adult husband here). It’s not often that we have buttermilk lying around but I had plans to make my jalapeño cornbread recipe so I had tons to spare. These are so much better than boxed mix and not much additional effort. Plus, they are so much fluffier and more flavorful. If you love this recipe, share it! Ingredients
2 cups flour
2 tbsp sugar
1tsp baking powder
1 tsp baking soda
1/2 tsp kosher salt
2 eggs
2 cups buttermilk
2 tsp vanilla extract
3 tbsp oil
Butter, for serving
Maple Syrup, for serving
Directions
Whisk together dry ingredients in a large bowl
In a separate bowl, whisk together wet ingredients
Slowly add the wet ingredients to the dry ingredients and whisk until smooth with no clumps
Heat a large non-stick pan, to medium-low heat
Add ¼ tbsp butter to the pan and ladle about ½ cup of batter over melted butter
When the batter is set on top and bubbling, flip and cook until golden brown on both sides
Transfer to plate and serve with additional butter and maple syrup. Enjoy!
