Dayne's Chicken Lettuce Wraps


 

One evening during my busiest semester of grad school, I came home from a long day of studying and Dayne had this amazing meal prepared. It was so nice coming home and having a warm, healthy dinner ready. It is so satisfying and while filling, it never leaves me overly stuffed or bloated. Now almost every time Dayne offers to make dinner, I ask for this meal.


We prefer Boston lettuce for the wrap, but feel free to use whatever type of lettuce you prefer. This recipe is quick and easy, and you can make the filling in advance for a quick, healthy meal. Feel free to play around with the different ingredients to make it your own. Enjoy!


Ingredients


Sauce:

  • 3 tbs soy sauce

  • 2 cloves garlic, minced

  • 2 tbs hoisin sauce

  • 1 tbs chili garlic paste (can add more for more spice)

  • 1 tbs brown sugar

  • 1 tbs rice vinegar

  • 2 tsp cornstarch

  • 1 tsp sesame oil

  • 1 tsp Mirin


Filling:

  • 1 tbs olive oil

  • 1 lb ground chicken

  • 1 medium zucchini, diced

  • 6 oz finely chopped mushrooms

  • 4 cloves garlic, minced

  • 2 green onions, thinly sliced with whites separated

  • 1 tsp grated ginger

  • 1 (8-ounce) can whole water chestnuts, drained and chopped

  • Salt and pepper, to taste

  • 1 head Boston lettuce

 

Directions

  1. Start by chopping off the base of the lettuce, gently peel away each layer for the wraps, rinse and set aside to dry

  2. Combine all sauce ingredients into small bowl, whisk until combined, set aside

  3. Pre-heat skillet on medium-high heat and add ground chicken

  4. Season chicken with salt an pepper and crumble into small pieces with spatula

  5. Once chicken is cooked through, add zucchini and mushrooms, cook for about 5 minutes until mushrooms release their juices and are cooked through

  6. Stir in garlic, whites of green onions, and ginger and cook for about a minute until fragrant

  7. Stir in water chestnuts, sauce, and 1/4 cup of warm water, combine and stir for 1-2 minutes until sauce thickens

  8. Remove from heat and spoon mixture into bowl to serve

  9. Add mixture into individual lettuce wraps and top with remaining green onions and sesame seeds (optional)
