Easy 10-Minute Naan Pizzas



I initially started making these with large tortillas when my sister-in-law, Paige, put me onto them and now we make them pretty regularly. In addition to tortillas, naan also works great as a base so we mix it up and do both. They are a great weeknight dinner because they are quick to make and everyone can add whatever toppings they want to their individual pizza. It's also a delicious way to use up any leftover ingredients you have in your refrigerator. We happened to have frozen naan from Trader Joes but feel free to use fresh naan or flour tortillas.


We have had an especially hard week so we wanted to make something comforting and easy to throw together. We had some mascarpone, a few mushrooms, thyme and a can of sliced black olives, but you can make these with whatever toppings you have, feel free to get creative. We buy the frozen naan from Trader Joes. It tastes just as good as fresh naan and is so convenient to have in the freezer whenever we need it. Throw it in the oven for about 2 minutes at 400 degrees to defrost, top with toppings, increase the oven temperature to 450, and bake for about 10 minutes. It's that easy!

Ingredients

  • 4 large pieces of naan or flour tortillas

  • White button mushrooms, sliced (about 3/4 cup)

  • 1 small can sliced black olives

  • 4 oz mascarpone (save half for topping)

  • 1 Tbsp finely chopped thyme

  • Salt and pepper to taste


Directions

  1. Preheat oven to 450 degrees

  2. Spread an even layer of mascarpone over naan or tortilla

  3. Sprinkle with thyme and salt and pepper to taste

  4. Layer on mushrooms and black olives

  5. Bake on a foil lined baking sheet for 10 minutes

  6. Top with small dollops of mascarpone and salt and pepper to taste and enjoy!
