Greek Chicken Gyros


 

I really love this recipe because it is so fresh and quick to prepare. The mint gives it such a fresh taste which is great on a warm day. I prefer Gyro but you can use pita pockets, which can be a little temperamental but are a lighter option to gyro wraps. Either way both taste just as delicious. The tzatziki sauce is also optional to buy, I like to make it myself but if you are short on time you can buy this already prepared at most grocery stores. Ingredients


Filling

  • 1 lb chicken breast

  • 4 gyros or pita pockets

  • 1/2 cup pitted Kalamata olives, coarsely chopped

  • 1.5 cups cherry tomatoes, quartered

  • 1 cup cucumber, diced

  • 1 Tbsp Mint, finely minced

  • 2 Tbsp minced parsley

  • Juice from 1/2 lemon

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/2 cup crumbled feta cheese


Tzatziki sauce

  • 1/2 cup non-fat greek yogurt

  • 1/2 cup sour cream

  • 1/2 cup cucumber, finely chopped

  • 1 Tbsp parsley, minced

  • 1 tbsp dill, minced

  • Juice from 1/2 lemon

  • 1 clove garlic, finely minced or pressed through garlic press

  • 1/4 tsp salt

  • 1 Tbsp olive oil


Greek Chicken Seasoning

  • 1 tsp dried oregano

  • 1/2 tsp dried basil

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp salt

  • 1/4 tsp black pepper


Directions

  1. Preheat oven to 400 degrees

  2. Combine dried oregano, dried basil, onion powder, garlic powder, salt, and pepper and sprinkle over both sides of chicken breasts

  3. Transfer chicken to aluminum foil lined sheet pan and place into preheated oven for 20-25 minutes until the center of chicken breast reaches 165 degrees, then let rest for about 10 minutes before slicing

  4. In the meantime, in a large bowl combine kalamata olives, tomatoes, cucumber, mint, parsley, lemon juice, and salt and pepper

  5. Next, prepare the Tzatziki sauce in a medium bowl by combining yogurt, sour cream, cucumber, parsley, dill, lemon juice, garlic, and salt. Once combined, drizzle top with olive oil.

  6. To serve, spoon in tomato cucumber mixture, sliced chicken breast, and feta into the pita and top with Tzatziki sauce. Enjoy!
