Italian Antipasto Salad



Are you in need for healthy lunch or salad inspiration? Look no further. This salad kicks it up a notch with all of your charcuterie favorites. I try to prep a few salads for the week to bring to work because who wants to wake up earlier than they have to and prepare lunch? I like to do this to prevent throwing together boring last minute salads that make me want to just buy lunch instead.


Lately we have been getting a lot of food donations at the hospital and the things people send are usually carb heavy to feed a lot of people. This was great for a few days. It is amazing being thanked and recognized and who doesn't love free food? But I simply cannot maintain this diet for much longer. I needed to lighten it up with a delicious salad and this one is so good I could eat it every day. If you love this recipe, share it! Ingredients:

  • A couple handfuls of mixed lettuce/spring mix blend lettuce

  • 1/3 cup quartered artichoke hearts

  • 1/3 cup halved cherry tomatoes

  • 1/3 cup chickpeas, drained and rinsed

  • 1/3 sliced and quartered salumi

  • 1/4 cup kalamata olives

  • 1/4 cup sliced red onions

  • 1/3 cup halved fresh mozzarella balls


Salad dressing:

  • 1 clove garlic, finely minced

  • 1 Tbsp lemon juice from about 1/2 lemon

  • 1/4 tsp Dijon mustard

  • 1 tsp honey

  • 3 tbsp olive oil

  • 1 tsp parsley


Directions:

  1. In a medium bowl whisk together garlic, lemon juice, dijon mustard, honey, olive oil, and parsley

  2. Add lettuce to a large salad bowl or container and top with artichoke hearts, cherry tomatoes, chickpeas, salumi, kalamata olives, red onions, and mozzarella balls

  3. Drizzle with salad dressing and season with salt and pepper to taste, Enjoy!
