Italian Antipasto Salad
Are you in need for healthy lunch or salad inspiration? Look no further. This salad kicks it up a notch with all of your charcuterie favorites. I try to prep a few salads for the week to bring to work because who wants to wake up earlier than they have to and prepare lunch? I like to do this to prevent throwing together boring last minute salads that make me want to just buy lunch instead.
Lately we have been getting a lot of food donations at the hospital and the things people send are usually carb heavy to feed a lot of people. This was great for a few days. It is amazing being thanked and recognized and who doesn't love free food? But I simply cannot maintain this diet for much longer. I needed to lighten it up with a delicious salad and this one is so good I could eat it every day. If you love this recipe, share it!
