Mean Green Sauce

When I was in college, I lived in a house with my three best friends. On the corner by our house, there was a tiny hole-in-the-wall Mexican restaurant that I would go to nearly every weekend to pick up breakfast tacos for the house. They always sent us with their house red and green salsas that were to die for. So when Dayne and I moved to New York, I would crave breakfasts tacos and this sauce. I looked EVERYWHERE for a taco truck or gas station cafe (those from Texas will understand this reference). So after searching and not succeeding, I set out to replicate the recipe. I called around and explained my desperation for a taste of home and surprisingly got a lot of helpful information. After I finally perfected the formula, I was transported back in time and suddenly I was back in Denton, Texas with my girls eating around the breakfast table.
Whew, blast from the past. Anyway, the sauce is spicy, depending on your heat tolerance. If you generally cannot tolerate heat well, you can substitute two or more of the jalapeños with poblanos and if you like extra heat, throw in a serrano. The taste is so much better the morning after making and also the spiciness settles a bit so I recommend making it the night before you plan to use. It will last in the refrigerator for about 2 weeks.
Use this sauce on anything you want such as tacos, burrito bowls, eggs, pizza, sandwiches, burgers, chicken, etc. I hope you make this green sauce and I hope it changes your life like it did mine. Link to my simple breakfast taco recipe, here. Go Mean Green Eagles! 😄
Ingredients:
7 jalapeños + 1 serrano (optional)
1/4 yellow onion
3 cloves garlic
1/4 cup vegetable oil, grape seed oil, or sunflower seed oil
1 tsp salt
Directions
Place whole jalapeños, onion, and garlic in a medium sauce pan and cover with water
Place over medium-high heat and boil for about 15 minutes
Remove from water with slotted spoon and let cool
Once cooled, remove stems from jalapeños and transfer to blender or cup for immersion blender
Blend until smooth and store in an airtight container in the fridge until ready to serve
