Strawberry Mint Fizz



Remember the stewed strawberries from the Starbucks overnight oats recipe? I used them to create this delicious and refreshing cocktail. I like to use gin but you can substitute vodka or cut out the alcohol for a mocktail if you prefer.

Ingredients

  • 3 bar spoons stewed strawberries, about 3 heaping tsp (see recipe below)

  • 1 Tbsp fresh Lemon Juice

  • 4 mint leaves

  • 2 oz gin

  • Sparkling water or champagne


Directions

  1. Muddle mint with stewed strawberries

  2. Add lemon juice, gin, and ice

  3. Shake to combine

  4. Pour into glass though fine mesh strainer

  5. Top with about 1 oz sparking water or champagne

Makes one cocktail

 

Stewed Strawberries:


Ingredients:

  • 2 cups strawberries, diced

  • 1/4 cup water

  • 3 tbsp sugar


Directions:

  1. In a small sauce pan, stir in the strawberries, water and sugar over medium heat

  2. Once boiling, turn the heat to low and simmer for about 10 minutes

  3. Remove strawberries from heat and let cool, then transfer to airtight container and place in fridge
